The Chenin vines, planted primarily in 1993, benefit from a soil of schist and chert. The harvest is done by hand, followed by gentle pressing. The wine is then fermented and aged in a variety of barrels, as well as in large oak casks and stoneware jars, to achieve remarkable complexity and balance.
